WA Day Long Weekend

All WA Day long weekend, Rústico at Hay Shed Hill will be serving a WA Origins menu — a special 5 course degustation menu focused solely on the best locally sourced West Australian produce!

Here’s what’s on the menu:

  • Rottnest Island Scallops sustainably sourced from One Sea — a boutique fishery fishing off one boat just north of the island

  • Wilyabrup Macadamias grown on Harmans Mill Road by the Dykstra family

  • Tender and juicy premium Australian Angus Beef sourced from cattle grown in the Margaret River

  • Sustainably caught seafood such as the Shark Bay King Prawns, Western Rock Lobster and Shark Bay Clams — all locally caught in the pristine waters of WA

  • Arkady Lamb — a unique South West product from a single farm and flock ensuring a consistently high meat quality. It makes for a superb eating flavour and texture which is achieved from a combination of slow maturing and pasture raised lambs exposed to salt rich grazing country

  • Beagle Island Octopus sustainably caught off the Mid West Coast using trap and catch techniques

  • Dardanup's Timberhill Pork — moisture enhanced to add tenderness, juiciness and flavour

  • Local bush lemons with their sweet and fragrant flavour producing less acidity than typical lemons — picked and delivered to the kitchen at Rústico on the same day for peak freshness!

We will also be showcasing some of the best drinks from our favourite local distilleries including gin from West Winds in Cowaramup, Giniversity in the Margaret River and Republic of Fremantle to name a few.

Of course our favourite local breweries will be well presented with tap beers from Eagle Bay and Brewhouse and various ale’s and lager’s from Colonial, Little Creatures, Gage Roads and Shelter.

Not to mention, premium Hay Shed Hill wines from one of WA’s most iconic vineyards (one of the first established in the Margaret River!), with vines grown on the doorstep of our restaurant.

The WA Origins menu is available all weekend long including the WA Day public holiday on June 5th.
